Nourishing Mondays: Crispy BBQ Chicken Fingers

No matter how many fancy or gourmet foods I try, one of my favorite things to eat will always be chicken fingers. With a crispy seasoned crust, moist white meat, and a flavorful dipping sauce, these strips are one of my ultimate comfort foods.

With a little time and effort, you can easily enjoy this treat at home. These strips are baked, not fried, so you can enjoy them and feel good about your food choice. They are healthier than the fast food version, but don’t let that fool you: these chicken fingers taste 100% indulgent.


1 lb boneless, skinless chicken breasts
1/2 cup barbecue sauce
1 cup dried breadcrumbs
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp dried parsley
½ tsp onion powder
¼ cup ranch dressing
1 Tbsp buffalo hot sauce


Slice chicken breast into long, thin strips. In the refrigerator overnight, marinate chicken in the barbecue sauce. When ready to prepare chicken strips, preheat oven to 350F.

In a shallow bowl, mix dried breadcrumbs with salt, pepper, garlic powder, onion powder, and parsley. With one hand, pick up a chicken strip, shake off excess marinade, and place into bowl of breadcrumbs. With the other hand, flip chicken over and slide it around until coated with breadcrumbs. Place chicken strip onto a greased baking sheet. Repeat until all chicken has been coated, keeping one hand “clean” and using the other hand to handle the breadcrumbs.

Bake for 12-15 minutes, flipping once.

For the dipping sauce, simply mix together ranch dressing and buffalo sauce. Dip and enjoy!

Serves 3-4.
